    The progress of malolactic fermentation in red wines has been monitored by using ultrasonic techniques. The evolution of ultrasonic velocity of a tone burst 1 MHz longitudinal wave was measured, analyzed and compared to those parameters of oenological interest obtained simultaneously by analytical methods. Semi-industrial tanks were used during measurements pretending to be in real industrial conditions. Results showed that the ultrasonic velocity mainly changes as a result of the conversion by lactic acid bacteria of malic acid into lactic acid and CO2. Overall, the present study has demonstrated the potential of the ultrasonic technique in monitoring the malolactic fermentation process. (C) 2014 Elsevier B.V. All rights reserved.

    Many ultrasonic sensors intended for non-destructive testing include a plastic or metal element, known as buffer rod, between the ultrasonic transducer and the material under analysis. Buffer rods are often terminated in the form of a conical tip for ultrasonic inspection of liquid-like substances. The conical tip is carefully shaped in a 45?? angle to favour the in phase reception of all the components of the ultrasonic wave reflected at the buffer tip, obtaining thus a maximum amplitude measurement signal. The effect of the buffer rod cone angle on measurement signals is studied in this work. A straightforward approximate formula for the effect of the error angle on measurement signal amplitude is used. Simulations are performed using a two-dimensional finite differences tool. Measurements are conducted with the same operating conditions and buffer rod materials and dimensions as those defined for both approximate formula evaluation and simulations. Thus, a comparison of the approximate formula, simulation and measurement results are established. Furthermore, the significance of some parameters such as ultrasonic transducer operating frequency and diameter, and buffer rod material are also analysed. The obtained results show that significant loss of the measurement signal amplitude is found only for cone error angles beyond the range of usual machining errors.

    The demand for powder metallurgy (P/M) parts in its traditional automotive market is predicted to grow, but future sector expansion depends directly upon its capability to manufacture zero-defect parts for industries such as aerospace and medicine. The lack of adequate inspection systems has important implications from the point of view of quality assurance, since it increases the costs, time and wasted material. In recent years the applicability of several techniques for the inspection of P/M parts has been investigated, such as Eddy current testing, computer tomography or X-ray imaging, but studies have revealed that all of them have deficiencies that make them unavailable for a complete and reliable flaw detection and density defect recognition. A new inspection tool has been developed based on pulse echo ultrasonic technology combined with robotics, which makes it possible to provide a global density map of sintered.

    Buffer rods can be used to perform non-destructive and on-line analysis of food and beverage products. These rods, usually solid cylinders, can be long and heavy for certain applications. In this paper, a resizing analytic procedure is described. Buffer rods designed following this new procedure can be several times shorter than the conventionally designed ones, optimising thus their weight and cost. The signal to noise ratio (SNR) of the resized buffers is also studied in order to determine their practical usability. To this effect, simulations and experiments are conducted using metal and plastic buffer rod materials appropriate for food and beverage testing such as aluminium and polyethylene.

    La acción de las bacterias fácticas, durante la fermentación maloláctica (FML) del vino tinto, tiene como principal finalidad la reducción del nivel de concentración del ácido málico al tiempo que se va incrementando el del ácido láctico y se van formando algunos metabolitos secundarios. Es factible pensar que, durante los dias necesarios para el completo desarrollo maloláctico, los diferentes cambios fisicoquimicos experimentados por el vino tinto conlleven a alteraciones sistemáticas en sus parámetros acústicos característicos, cambios que pueden ser aprovechados para monitorizar y caracterizar todo el proceso mediante ondas de ultrasonido. Por consiguiente, en este trabajo se presentan los resultados obtenidos al poner en práctica un sistema que, midiendo velocidad de propagación durante intervalos de tiempo programados, realiza el seguimiento ultrasónico de la FML llevada a cabo en vinos de la variedad Tempranillo y Merlot. Finalmente, se correlacionan estos resultados con las rnedidas de concentración que habitualmente se suelen realizar a través de métodos convencionales.

    En la industria vinícola, la fermentació malolactica (FML) és una etapa important en la elaboració de vins negres i l'optimització del seu control és molt convenient per aconseguir una millor qualitat del producte final. En aquest treball s'ha aplicat, per al monitoratge d'aquesta fermentació, l'ús d'una técnica física basada en la propagació de les ones ultrasóniques sensibles als canvis de propietats físico-químiques del material com densitat, duresa, terbolesa, viscositat i altres, que es presenten com una atractiva alternativa als métodes químics tradicionals de mesura d'aquest procés. És una técnica no destructiva que permet un control de qualitat "on-line", rapida i precisa. Aquesta técnica consisteix en mesures d'una serie de parametres ultrasónics de senyal, velocitat i atenuació de la ona ultrasónica.

    Many varieties of bread are prepared using flour coming from wheat. However, there are other types of flours milled from rice, legumes and some fruits and vegetables that are also suitable for baking purposes, used alone or in combination with wheat flour. The type of flour employed strongly influences the dough consistency, which is a relevant property for determining the dough potential for breadmaking purposes. Traditional methods for dough testing are relatively expensive, time-consuming, off-line and often require skilled operators. In this work, ultrasonic analysis are performed in order to obtain acoustic properties of bread dough samples prepared using two different types of flour, wheat flour and rice flour. The dough acoustic properties can be related to its viscoelastic characteristics, which in turn determine the dough feasibility for baking. The main advantages of the ultrasonic dough testing can be, among others, its low cost, fast, hygienic and on-line performance. The obtained results point out the potential of the ultrasonic analysis to discriminate doughs of different types of flour.

    n the winemaking process, the malolactic fermentation is an essential process in the production of high quality red wines which concerns the conversion of malate into lactate. In this work, the ultrasonic velocity through wine samples with different concentrations of malate and lactate was measured using the pulse echo technique with 1 MHz tone burst signals. The evolution of these concentrations during malolactic fermentation was taken into account in order to determine the ratio between concentrations of malate and lactate of the different samples. These preliminary results have revealed that the ultrasonic velocity increases during the conversion of malate to lactate. In addition, measurements have been conducted to quantify the influence of variations in turbidity and temperature on test samples. Therefore, these results show the possibility of using ultrasonic velocity measurements for on-line monitoring the malolactic fermentation of red wine and may help to improve and contribute to the development of the winemaking process.

    This paper describes a high voltage pulser developed for an air-coupled ultrasonic array NDE system based on Lamb waves. Unlike the classical single pulse excitation circuits, this pulser is able to generate a bipolar return-to-zero square-wave burst signal up to ±250 V of amplitude. The system is composed of two 32 elements concave array with a resonant frequency of 800 kHz. To excite all the transducers an array of pulsers with small volume and weight to be able to place it close to the concave array has been designed.

    In this paper, experimental measurements of the vibration pattern that results when an air-coupled A0 Lamb wave mode propagates in a plate are presented. Lamb waves are generated using an air-coupled piezoelectric transducer array. The measurements were performed in 304 stainless steel using laser interferometry. Air coupled piezoelectric ultrasonic array transducers are a novel tool that could lead to interesting advances in the area of non-contact laminar material testing using Lamb wave’s propagation techniques, and it is interesting to know the vibration pattern in the plate. Using this system, some snapshots of the interaction of the A0 Lamb wave mode with a crack-defect in the plate are also presented.

    Non-Destructive Evaluation (NDE) techniques have achieved a great development during the last decades as a valuable tool for material characterization, manufacturing control and structural integrity tests. Among these tools, the guided wave technology has been rapidly extended because it reduces inspection time and costs compared to the ordinary point by point testing in large structures, as well as because of the possibility of inspecting under insulation and coating conditions. This fast development has motivated the creation of several inspection and material characterization systems including different technologies which can be combined with this technique. Different measurements systems based on laser techniques have been presented in order to inspect pipes, plates and diverse structures. Many of them are experimental systems of high cost and complexity which combine the employment of a laser for generation of waves in the structure and an interferometer for detection. Some of them employ air-coupled ultrasound generation transducers, with high losses in air and which demand high energy for exciting waves in materials of high stiffness. The combined employment of a commercial vibrometer system for Lamb wave sensing in plates has been successfully shown in the literature. In this paper we present a measurement system based on the combined employment of a piezoelectric wedge transducer and a laser vibrometer to sense guided acoustic waves in carbon steel pipes. The measurement system here presented is mainly compounded of an angular wedge transducer, employed to generate the guided wave and a commercial laser vibrometer used in the detection process. The wedge transducer is excited by means of a signal function generator whose output signal has been amplified with a power signal amplifier. A high precision positioning system is employed to place the laser beam at different points through the pipe surface. The signal detected by the laser vibrometer system is amplified with a signal amplifier and then it is displayed in a digital storage oscilloscope. This set-up offers the possibility of analyzing in a simpler way the wave propagation and the material evaluation in pipes of certain wall thickness. The material characterization considering distinct wave propagation modes can be easily achieved, changing the different incident angles of the wedge piezoelectric probe and their combined employment with several driving signals. Moreover, this experimental sensing system offers other possibilities of inspecting and analyzing the wave propagation in some features (bends, flange joints, welds,...) of the pipe surface which cause very large reflections and mode conversions and which in practice limits the inspection range when are inspected with conventional receiving transducer arrangements.
