    El análisis de la productividad y la eficiencia tiene importantes implicaciones para la evaluación de la viabilidad económica y la sostenibilidad de las empresas. Dicha evaluación requiere el uso de un enfoque metodológico adecuado que produzca estimaciones de eficiencia no sesgadas. Mediante el estudio de sectores económicos no analizados con anterioridad y la adopción de nuevos enfoques metodológicos, esta tesis contribuye a la literatura, tanto desde el punto de vista metodológico como empírico.La tesis estudia tres cuestiones principales que se reflejan en tres artículos científicos independientes, que constituyen el elemento central de la misma. El principal objetivo del primer artículo es el de comparar la eficiencia técnica de las explotaciones de uva ecológicas y convencionales en Cataluña. Para ello utilizamos el modelo de la frontera de producción estocástica. El análisis se basa en datos de corte transversal de una muestra de 141 explotaciones catalanas especializadas en la producción de uva. Los resultados sugieren que los agricultores ecológicos son, de promedio, técnicamente más eficientes que los convencionales (los ratios de eficiencia son 0,80 y 0,64, respectivamente). Además de la adopción de técnicas ecológicas, la experiencia también incrementa la eficiencia técnica. En cambio, las explotaciones con una mayor proporción de trabajo no remunerado, que se encuentran en una zona desfavorecida y/o que tienden a tener fuertes preferencias por preservar el medio ambiente, son generalmente menos eficientes.En el segundo artículo, se utilizan los métodos de máxima verosimilitud local (LML) propuestos recientemente por Kumbhakar et al. (2007) para estimar la eficiencia técnica de una muestra de explotaciones agrícolas especializadas en la producción de cereales, oleaginosas y proteaginosas en Kansas. Las técnicas LML permiten superar muchas de las limitaciones asociadas a los modelos de frontera paramétricos y no paramétricos. Los resultados sugieren que las explotaciones de Kansas son técnicamente eficientes, con niveles de eficiencia del orden del 91%. Estos resultados se comparan con los ratios de eficiencia obtenidos a través del análisis de la envolvente de datos y de la frontera de producción estocástica.El último artículo se centra en la estimación de la eficiencia técnica y medioambiental de una muestra de explotaciones Catalanas especializadas en la producción de cereales, oleaginosas y proteaginosas. Para ello se aplica una versión ampliada de la metodología desarrollada recientemente por Coelli et al. (2007), la cualse extiende para considerar explícitamente las condiciones estocásticas bajo las cuales tiene lugar la producción. Para ello se utilizan los métodos estado-contingente propuestos por Chambers y Quiggin (1998 y 2000). Los resultados sugieren que las explotaciones presentan niveles de eficiencia técnica y medioambiental del orden del 93% y 74%, respectivamente.

    Our research explored the relative importance of pig castration amongst other aspects of animal welfare, and the potential impact of information and sensory experiences on European Union (EU) consumers' preferences. The EU is considering a future ban on surgical pig castration by 2018 which may affect markets and consumers' preferences. We carried out an empirical study using consumer-level data obtained from questionnaires completed in a controlled environment by a total of 825 consumers. The experiment was carried out in six EU countries (Spain, United Kingdom, The Netherlands, France, Italy and Germany) which account for 66.0% of the EU-27's and 76.3% of the EU-15's meat production. Results show that consumers do not perceive pig castration to be a relevant aspect of animal welfare nor its relationship with meat quality. Consumers with healthy life styles, concerned about animal welfare and who have had a negative sensory experience with boar meat are willing to accept paying more to avoid boar taint.

    We analysed the heterogeneity of consumers' preferences toward a red wine for a special occasion in Catalonia (Spain). The empirical analysis included a survey of 400 consumers. A variation of the "dual response choice experiment" (DRCE) design, which allows the simultaneous analysis of what consumers "would prefer" (first stage of the DRCE) and what they "would purchase" (second stage of the DRCE) was implemented using the heteroscedastic extreme value (HEV) model. The results show that the most preferred attributes are wines of Catalan origin, wines made with the Cabernet Sauvignon grape variety, and wines that have been previously experienced by the consumer. The ordering of the attributes was not affected by whether the choice of purchase was forced. Nevertheless, the results from the non-forced choice experiment exhibited an increasing tendency of welfare estimates for the most preferred attributes and levels

    This paper uses a hypothetical Choice Experiments (CE) to investigate Spanish consumers¿ preferences towards beef meat enriched with polyunsaturated fatty acids (omega-3 and conjugated linoleic acid. Data are gathered from self-completed questionnaires in a controlled environment with two different samples (320 and 322 consumers) differentiated by the information received. The surveys were carried out in three main Spanish cities (Barcelona, Zaragoza and Pamplona). We used a variation of the ¿Dual Response Choice Experiment¿ (DRCE) design due to its ability to emphasis the purchase context. The preliminary results showed that consumers who received information attach higher preferences value to enriched meat with polyunsaturated fatty acids. The utility associated with the moderate content of fat increase for informed consumers, showing a substitute effect. Informed consumers are willing to accept meat with visible fat if it is enriched

    The main objective of this paper is the determination of consumers¿ wine preferences depending on the occasion of consumption in Catalonia (Spain). A special attention is paid to the origin of the wine. To fulfil our goal a survey with 400 wine consumers is implemented. Methodologically, two Choice Experiments have been applied within a sample in order to compare results from two different occasions of consumption; a regular and a special occasion. We used a variation of the ¿Dual Response Choice Experiment¿ (DRCE) design due to its ability to emphasis the purchase context and the Random Parameter Logit (RPL) model which relaxes the IIA restriction. The preliminary results suggest that consumers¿ preferences differ according to the occasion of consumption, especially regarding to the price.

    Purpose – Focussing on Latin American immigrants in Barcelona, the objective of this paper is twofold: to measure their degree of ethnical identity; and to analyse the relationship between food habits and their ethnical identity. Design/methodology/approach – Face-to-face interviews with a representative sample of Latin American immigrants in the Metropolitan area of Barcelona are undertaken. Ethnic identity is measured using the MEIM scale, which combines aspects from the social identity and personal development theories. Finally, a Multinomial Logit Model is used to identify the relationship between food habits and ethnical identity. Findings – Results indicate that the higher the level of ethnic identity and feeling of belonging of immigrants in Catalonia, the greater the persistence of dietary habits from the country of origin. Contrasting with results from other studies, no correlation is found between the persistence of dietary habits and either the length of time spent in Spain or the level of integration into the Catalan culture (measured through use of the Catalan language). Research limitations/implications – Findings should logically be interpreted within the context of the population and sample studied. Further research should be addressed to analyze other immigrant groups such as Muslims, Asians and Eastern Europeans. Originality/value – This study explores the strength of traditional food habits of immigrants living in a foreign cultural environment and the role of ethnic identity in contributing to this strength. While past literature focussing on this topic is based on atheoretical and partial indicators to measure ethnic identity, this study provides evidence on the usefulness of using a theory-based and multidimensional measure. The behaviour of Latin American immigrants in Spain is used as a case study.

    The aim of this thesis is to investigate Spanish consumers purchase motivations and behavior towards organic food by means of determining the key factors that take part on building their behavior. An important contribution of this work consists on providing more evidence on consumers’ underlying motivations to buy organic food for the particular case of Spain and to test the role of sensory “experience” in defining individual new WTP for a post purchasing situation. This thesis investigates the role of personal, economic and social elements in predicting Spain consumers’ attitudes and purchase intentions toward organic food. It place together all the relevant variables identified by previous studies developing a new and complex behavioral model on consumers’ organic decision making process. The new conceptual model is developed and tested via structural equation modeling. Results show that attitudes, knowledge, as well as environmental and health concern partially mediates the effects of trust in market agents and risk perceptions on attitudes toward organic food. Furthermore, price and subjective norms have been detected to explain organic food purchase intention. Next, this thesis analyzes the factors affecting consumer’s willingness to pay (WTP) for organic food. In this context, the most widely used valuation methods have been Conjoint Analysis and Choice Experiments. However, discrete choice and conjoint data do not offer immediate financial consequences for the participants. As a consequence, consumers tend to overestimate their real WTP. For that reason, this thesis investigates approaches to incorporate incentives into the traditional conjoint and choice methodologies. In this research, we analyze the “Calibrated Auction-Conjoint Valuation method” (CACM), by comparing Non-adjusted values from a self-explicated conjoint method to the final calibrated values entered using a non-hypothetical auction in a context well suited to the CACM: preferences for sustainable farming. We noticed that consumers significantly reduced their WTP when moving from the initial stage of the CACM to the final stage, primarily by placing less importance on product prices, implying that WTP values from a self-explicated conjoint method used alone would likely lead to overstated estimates of WTP. Finally, consumers’ willingness to pay and sensory “experience” is assessed through an experimental auction. Two auctions have been designed: the first consists on consumers’evaluation of different food options based on search attributes (before purchase) and the second after tasting it (simulating a post purchasing situation). In between a hedonic sensory test is performed. Simultaneously, as a complementary exercise, a trained panel sensory test has been employed to identify the main organoleptic characteristics that consumers associate with the hedonic taste satisfaction. Finally, factors affecting consumers’ WTP differences in the two auctions are analyzed. We have detected that the Spanish consumers have a positive attitude towards sustainable food due to environmental concerns, health concerns, and trust in certification and market agents. However, the premium they are willing to pay for these products is lower than the current market price. Furthermore, both “search” and sensory “experience” do influence consumers’ purchase behavior.

    El objetivo de esta tesis es investigar las motivaciones de compra de los consumidores españoles y el comportamiento hacia los alimentos ecológicos por medio de la determinación de factores clave que intervienen en la construcción de su comportamiento. Una contribución importante consiste en proporcionar más evidencia a la ya existente en España sobre las motivaciones subyacentes de los consumidores para comprar alimentos ecológicos, así como determinar el rol de la experiencia sensorial en la generación de las nuevas disposiciones a pagar una vez comprado el producto. En esta tesis se investiga el papel de elementos personales, económicos y sociales en la predicción de las actitudes e intenciones de compra hacia los alimentos ecológicos de los consumidores de España. Se sitúan todas las variables identificadas en estudios previos desarrollando un complejo modelo del comportamiento de los consumidores de alimentos ecológicos en el proceso de toma decisión. Un modelo conceptual es desarrollado y probado a través de modelos de ecuaciones estructurales. Los resultados muestran que las actitudes de conocimiento, así como la preocupación del medio ambiente y la salud media parcialmente los efectos en la confianza en los agentes del mercado y las percepciones de riesgo a las actitudes hacia los alimentos ecológicos. Por último, las normas subjetivas y el precio explican la intención de compra. Además en esta tesis se analizan los factores que afectan la disposición a pagar de los consumidores alimentos ecológicos. En este contexto, los métodos de valoración más utilizados han sido el análisis conjunto y experimentos de elección. Sin embargo, la elección discreta y el conjunto de datos no ofrecen consecuencias financieras inmediatas para los participantes. Como consecuencia, los consumidores tienden a sobreestimar su verdadera disposición a pagar. Debido a lo anterior, esta tesis estudia métodos para incorporar incentivos en las metodologías tradicionales de elección y el conjunto de datos. En esta investigación se analiza el “Calibrated Auction-Conjoint Valuation Method” (CACM), mediante la comparación de los valores no ajustados a partir de un método conjunto auto-explicado a los valores finales calibrados participando en una subasta hipotética, en un contexto muy adecuado para el CACM: las preferencias para la agricultura sostenible. Hemos encontrado que los consumidores redujeron significativamente su disposición a pagar cuando se pasa de la etapa inicial del CACM a la etapa final, principalmente mediante la asignación de menor importancia en los precios de los productos, lo que implica que los valores de la disposición a pagar de utilizando solamente un método de auto-explicado conjunto podría llevar a estimaciones exageradas de la disposición a pagar. Por último, la disposición a pagar de los consumidores se determina mediante una subasta experimental. Dos subastas se han diseñado: la primera consiste en la evaluación de los consumidores de las opciones de diferentes alimentos en función de atributos de búsqueda (antes de la compra) y el segundo después de probarlo (simulando una situación postcompra). Entre las dos apuestas se lleva a cabo una prueba sensorial hedónica. Al mismo tiempo, como un ejercicio complementario, una prueba sensorial con un panel entrenado se realizó para identificar las principales características organolépticas que los consumidores asocian con la satisfacción hedónica del gusto. Finalmente, para determinar los factores que afectan las diferencias en la disponibilidad a pagar de los consumidores se analizan dos subastas. Se encontró que los consumidores españoles tienen una actitud positiva hacia la comida producida de manera sostenible debido a las preocupaciones ambientales, problemas de salud, y la confianza en la certificación y los agentes del mercado. Sin embargo, la prima que están dispuesto a pagar por estos productos es menor que el precio del mercado actual. Por otra parte, existe una la influencia clara de los atributos intrínsecos del producto (tipo de producción, etc), y la “experiencia” sensorial en el comportamiento de compra del consumidor.

    Los mercados mundiales agroalimentarios se han visto recientemente afectados por shocks importantes tales como crisis alimentarias y el estallido del mercado de los biocombustibles. La presente tesis contribuye de forma significativa a la literatura existente sobre la transmisión de precios, analizando los impactos que estos shocks de mercado han tenido sobre los niveles de precios de los alimentos y la estabilidad de los mismos. Para ello se aplican modelos de econometría de series temporales recientemente desarrollados. La tesis estudia tres cuestiones principales en tres artículos científicos, que constituyen el elemento central de la misma. En el primer artículo, un modelo de corrección del error de cambio de régimen se aplica a series de precios mensuales para determinar el impacto de la crisis de la EEB sobre la dinámica de los precios del bovino a lo largo de la cadena comercial en España. Diferentes regímenes dentro del modelo representan diferentes comportamientos de precios ante distintas condiciones de mercado. Para esclarecer si el efecto de la EEB sobre la transmisión vertical de precios depende de la magnitud de la crisis, se construye un índice de información sobre la EEB que se utiliza para determinar el cambio de régimen. Los resultados sugieren que la crisis de la EEB afecta a los productores de carne y a los minoristas de forma diferente. Mientras que los precios al consumo no se ajustan ante la crisis, los precios al ganadero sí que lo hacen. La magnitud del ajuste depende de la magnitud de la crisis de la EEB. En el segundo artículo, un modelo bivariante de corrección del error de transición suave se aplica al estudio de los precios mensuales de las aves de corral para analizar los efectos que la gripe aviar ha tenido sobre la transmisión de los precios a lo largo de la cadena comercial de aves en Egipto. Al igual que en el artículo anterior, se construye un índice para reflejar el nivel de información que los consumidores tienen sobre la crisis, el cual se utiliza en el modelo como variable de transición entre distintos regímenes. Si bien los índices de información se han utilizado ampliamente para estudiar los impactos de las crisis alimentarias en los países desarrollados, este trabajo es el primero en utilizarlos para estudiar los efectos de estas crisis en países en vías de desarrollo. Nuestros resultados sugieren que los ajustes de precios ante desequilibrios del mercado dependen de la magnitud de la crisis de la gripe aviar. Además, estos ajustes tienen consecuencias muy diferentes para el equilibrio del mercado: durante la crisis los minoristas utilizan su poder de mercado para aumentar los márgenes de comercialización. Por el contrario, los márgenes del mayorista disminuyen. Los resultados también sugieren que los índices de información sobre las crisis contribuyen a una mejor comprensión de los efectos económicos de las mismas en los países en desarrollo.

    Food markets worldwide have been strongly affected by recent shocks such as food scares and the outbreak of the biofuels market. The present thesis makes a significant contribution to the existing literature on price transmission by shedding light on the impacts that these food market shocks have had on food price levels and stability. To do so, recent developments in time series econometrics are applied. Three specific objectives have been pursued in three papers that constitute the main body of the dissertation. In the first paper, a regime-switching vector error correction model is applied to monthly price data to assess the impact of BSE outbreaks on price relationships and patterns of transmission among farm and retail markets for bovine in Spain. Different regimes within the model represent different price behavior under different market conditions. To evaluate whether different magnitudes of the BSE food scare elicit different food price responses, a BSE food scare information index is developed and used as the variable determining regime-switching. Results suggest that BSE scares affect beef producers and retailers differently. While consumer prices are not found to respond to BSE scares, producer prices are adjusted as a response to the crisis. The magnitude of the adjustment is found to depend on the magnitude of the food scare. In the second paper, a bivariate smooth transition vector error correction model is applied to monthly poultry price data to analyze the effects that avian influenza has had on price transmission along the Egyptian poultry marketing chain. As in the previous paper, in order to reflect consumer awareness of the crisis, an avian influenza food scare information index is developed and used within the model as a transition variable. While food scare information indices have been used to assess the economic impacts of food scares on developed countries, ours is the first attempt to use them in the context of a developing country. Our results show that price responses to deviations from the market equilibrium parity depend on the magnitude of the avian influenza crisis. Further, these adjustments are found to have very different implications for market equilibrium: during the crisis retailers use their market power to increase marketing margins. In contrast, wholesaler margins are found to decline. Results also suggest that food safety information indices contribute to a better understanding of the economic effects of food scare crises in developing countries. In the last paper, error correction models estimated both using multivariate local linear regression and conventional parametric techniques are applied to assess price linkages and price transmission patterns between food and energy prices in Spain. More specifically, the models study the links between biodiesel, sunflower and crude oil prices. Results suggest the existence of a longrun, equilibrium relationship between the three prices studied. Biodiesel is the only variable that adjusts to deviations from this long-run relationship. Local linear regression techniques show that the speed of adjustment of biodiesel prices is faster when biodiesel is relatively cheap than when it is expensive. Energy prices are found to influence sunflower oil prices through short-run price dynamics.
