Abstract
The progressive freeze concentration is a separation technique that allows the concentration of solutions and also provides an easy ice purification whit relatively low energy. In this study, the whey freeze concentration was carried out in pilot-plant in three stages. The increase of soluble solids (°Brix) of the whey and the purity of the ice formed were analyzed.
